procedures that take place for the production of our extra virgin
olive oil are as follows:
The cultivation of the varieties Koroneiki and Athinolia olives
from the mountains and flat areas of the south-eastern Peloponnesus
(application AGRO 2.1 & 2.2).
The harvest of ripe olives
The transportation of harvested olives, from the fields
directly to the olive oil press.
Olives are cleaned and extracted (application ISO
22000) at temperatures lower than 28C via cold extraction
methods).
The olive oil is then transported in stainless steel tanks from
the olive oil press to our company’s standardization
facility.
We never supply olive oil from stock,
we always bottle at the time we finalise the order with our buyer.

Storage procedure
Olive oil reaches the standardization facility and is stored
there again in stainless steel tanks under controlled
conditions.
We filter the olive oil and proceed to its standardization
(application ISO 22000). Our standardization facility offers a
production capacity of 3,000 bottles per hour
